Bunmei Knives are traditional Japanese styled knives. They have been produce in the same style for over 150 years and still uphold their accuracy and razor sharp blades. Bunmei Knives are used by the some of the most famous Japanese chefs because they assist in producing true Japanese food. Produced by Yoshikin; the company that are famous for making Global knives, Bunmei knives have a bamboo handle and are made from high quality molybdenum/vanadium steel. Sharpened on only one edge of the knife (apart from model 1806), as is the case with many Japanese knives. They are produced for right handed people. If you require a left handed version, these are available from the factory to special order.This means that they are one of the most accurate knives around, and are ideal when dealing with sushi and sashimi in the kitchen.
Because of the intricate blade on this knife, we recommend you only ever sharpen this with a whetstone, and it should only be sharpened on the one side. As with most of our knife ranges, Bunmei knives should never be placed in the dishwasher and should always be cleaned by hand.
